Combine the garlic, fennel and basil in a food processor and puree. Add the red pepper flakes, cumin, coriander, anise, black pepper and salt and keep mixing until well combined and no chunks remain; you can add a little water to help the mixing process if needed. This is your seasoning and fennel mixture.
Put the ground pork in a wide pan with the seasoning and fennel mixture and mix well by hand. Place over medium heat and cook, stirring throughout and mixing with a spoon or potato masher, until fully cooked, about 20 minutes. Remove from the heat. Continue to stir and mash/chop up the meat while cooling, about 15 minutes. Strain.
