Add Italian seasoning blend, oil, vinegar, garlic, parsley, pepper, salt, cinnamon and nutmeg to a bowl with a lid and mix to combine. Add chicken and refrigerate, sealed, for 12 to 24 hours to allow all ingredients to marry up.
Preheat oven to 450 degrees F.
Spread chicken evenly on a cookie sheet, add 1/2 cup water and bake until cooked through, 15 to 18 minutes.
Serve in pita bread or flour tortillas or on Caesar or mixed green salads.
