Mediterranean Chicken

Read the recipe below to learn how to make Mediterranean Chicken with Nonna's Gourmet Marinara Sauce.

  • 4 chicken breasts (6oz. each)

  • 1 16oz. jar Caffe Nonna’s Marinara Sauce

  • All Purpose flour for dredging

  • ¼ c. fresh italian parsley

  • Oil for sautéing

  • salt and pepper to taste

  • 2 Tblsp. extra virgin olive oil

  • ½ c. calamata olives (drained)

  • ¼ c. capers (drained)

  • 1c. sun-dried tomatoes (cut into small strips)

  • 1c. portabella mushrooms (sliced into strips)

  • 2 Tblsp. roasted garlic

  • ¼ c. chopped red onion

  • ½ c. white wine

  1. Place chicken breasts between two pieces of saran wrap and with a meat tenderizer gently pound chicken breasts until ¼ inch thin.

  2. Dredge chicken breasts in flour and sauté in oil on medium heat. Sauté each side for approximately 2-3 minutes. Make sure you do not burn the chicken. Take out of pan and place on platter.

  3. Add 2 Tblsp. extra virgin olive oil to a sauté pan on medium heat. Place the garlic and onions in the pan and sauté for 15 seconds. Now add the olives, capers, sun-dried tomatoes and portabella mushrooms and sauté for approximately 3-4 minutes.

  4. Add the white wine and let reduce for about 3-4 minutes.

  5. Now add the jar of Caffe Nonna’s Marinara Sauce. Season with salt and pepper and add chicken breasts to sauce. Simmer for approximately 5 minutes.

  6. Pour sauce onto serving platter and place chicken on top, garnishing with parmesan cheese and Italian parsley.

  7. Serve with mashed potatoes, rice or your favorite pasta. Do not forget the Italian artisan bread.
